Tim is a local butcher who we started out with back in the day. We STILL get requests for his bacon and brats even though they have sugar and the bacon has nitrates. When we were selling Tim's Bacon and Brats we could not keep up with the demand. We moved to a bigger processor because we needed to move to a USDA inspected facility. Tim's facility is Wisconsin State inspected. We decided to feature Tim's products because there is still a demand for them.
