North Pasture Farms Sirloin Tip Beef Roast come from the hind quarter of the animal. Since these muscles are used for motion of the animal, the cut of meat is tougher than one of the more prime cuts of beef.
We have found that cooking the Sirloin Tip Roast works best if it is done Low and Slow, with varying internal temperatures. If you want to get a truly tender and juicy roast, go for 203 degrees internal temp.
I like to cook up this roast and then stick it in the fridge. When it is cool, it slices into thick sliced Roast Beef Sandwich meat very easily.
There is not a lot of fat on the Sirloin Tip, so if you are after lean meat, this is a good one.
