Connective tissue starts to break down and collagen turns gooey and tasty. We have tried going for 203 degrees internal temp several times and it works to perfection, especially with tougher cuts of meat such as Rump Roast, Sirloin Tip Roasts, Chuck Roasts, etc.
A rump roast also makes a very pleasing display if you use a sharp knife to cut it into slices. Be sure to cut across the grain!
