Beef Liver is extremely nutrient dense. When cooked correctly, it is really tender and moist. The easiest thing to do with beef liver is overcook it. Grandma used to cook her liver and onions by frying some bacon until it was almost done, then adding onions and cooking that until the onions were almost translucent. Then adding the liver cut into strips about as big as a pencil. She said that when the liver changed color from red to brown it was done. A comfort food indeed!
