GrassFed Beef Heart has a texture all it's own. When I was a kid we used it to make stew most of the time. Beef Heart is also widely liked as a substitute for steak, or just suateed and then served as a steak salad. It can also be slow cooked. It does have some fat which is best trimmed off along with any internal veinous material.
Average size for a heart is about 4 lbs.
